Smoked Sausage and Potato Bake

Ingredients
  

1 pound smoked sausage, sliced

4 medium russet potatoes, thinly sliced

1 large onion, chopped

2 bell peppers (any color), sliced

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried thyme

½ teaspoon cayenne pepper (optional for heat)

½ cup chicken broth

1 cup shredded cheese (cheddar or your choice)

Olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the sliced potatoes, sausage, onion, bell peppers, and garlic.

      Drizzle with olive oil and sprinkle with smoked paprika, thyme, cayenne pepper, salt, and pepper. Toss until the ingredients are well-coated.

        In a greased 9x13-inch baking dish, layer half of the potato and sausage mixture evenly on the bottom.

          Pour half of the chicken broth over the first layer. Add the remaining potato and sausage mixture on top, then drizzle with the rest of the broth.

            Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 40 minutes.

              After 40 minutes, remove the foil, sprinkle the shredded cheese evenly over the top, and bake uncovered for an additional 15-20 minutes or until the cheese is melted and bubbly, and the potatoes are tender.

                Once done, remove from the oven and let it sit for 5 minutes before serving.

                  Garnish with freshly chopped parsley for a pop of color and flavor. Serve hot!
