12 oz fettuccine pasta

1 lb smoked sausage (such as Andouille or kielbasa), sliced

2 tablespoons olive oil

1 small onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 cup heavy cream

1 cup grated Parmesan cheese

1 tablespoon Cajun seasoning (adjust to taste)

1 teaspoon smoked paprika

1/2 teaspoon black pepper

Salt to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil and cook the fettuccine according to package instructions until al dente. Drain and set aside.

    Sauté Sausage: In a large skillet over medium heat, add the olive oil. Once hot, add the sliced smoked sausage and cook until browned on both sides, about 5-7 minutes. Remove the sausage and set aside.

      Sauté Vegetables: In the same skillet, add the diced onion and bell pepper. Sauté until softened, approximately 4-5 minutes. Add the minced garlic and cook for another minute, or until fragrant.

        Prepare the Alfredo Sauce: Reduce heat to low and pour in the heavy cream. Stir in the Cajun seasoning, smoked paprika, black pepper, and salt, mixing well. Let this simmer for about 3-4 minutes, stirring frequently, until slightly thickened.

          Combine Ingredients: Gradually add the grated Parmesan cheese to the sauce, stirring continuously until melted and smooth. Return the cooked sausage to the skillet and toss to combine.

            Add Pasta: Gently fold in the cooked fettuccine until well coated with the creamy Cajun Alfredo sauce. If the sauce is too thick, you can add a splash of pasta water to reach your desired consistency.

              Serve: Remove from heat and transfer to serving plates. Garnish with freshly chopped parsley and additional Parmesan cheese if desired.
