1/2 cup unsweetened cocoa powder

1 cup all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

1 cup mini marshmallows

1/2 cup chocolate chips

1/4 cup crushed graham crackers (for topping)

1/2 cup chocolate frosting (store-bought or homemade)

Instructions
 

Preheat your oven to 350°F (175°C). Line a 12-cup muffin pan with cupcake liners.

    In a medium bowl, whisk together graham cracker crumbs, cocoa powder, flour, baking powder, baking soda, and salt. Set aside.

      In a large bowl, cream together the softened butter and sugar until light and fluffy.

        Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.

          Alternate adding the dry ingredient mixture and buttermilk to the butter mixture, starting and ending with the dry ingredients. Mix until just combined; do not overmix.

            Fold in the mini marshmallows and chocolate chips gently into the cupcake batter.

              Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full.

                Bake in the preheated oven for about 18-20 minutes, or until a toothpick inserted in the center comes out clean.

                  Allow the cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

                    Once cooled, frost each cupcake generously with chocolate frosting.

                      Sprinkle crushed graham crackers on top for that signature S'mores crunch and add a few mini marshmallows on each cupcake for decoration.

                        For a more dramatic effect, you can use a kitchen torch to lightly toast the mini marshmallows on top.
