4 bone-in pork chops

4 large russet potatoes, thinly sliced

1 medium onion, thinly sliced

2 cups heavy cream

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

2 tablespoons olive oil

2 teaspoons garlic powder

2 teaspoons onion powder

1 teaspoon paprika

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Preheat your oven to 375°F (190°C).

    Prepare the pork chops: Season the pork chops with garlic powder, onion powder, paprika, salt, and pepper on both sides.

      Sear the pork chops: In a large skillet, heat olive oil over medium-high heat. Add the pork chops and sear them for about 3-4 minutes per side until they are golden brown (they will not be fully cooked). Remove from the skillet and set aside.

        Sauté the onions: In the same skillet, add the sliced onions and sauté for about 5 minutes until they are soft and translucent.

          Prepare the scalloped potatoes: In a greased 9x13 inch baking dish, layer half of the sliced potatoes at the bottom, followed by half of the sautéed onions. Season with salt and pepper.

            Add cream and cheese: Pour half of the heavy cream over the potato and onion layer, then sprinkle half of the cheddar and mozzarella cheese.

              Repeat layers: Repeat with the remaining potatoes, onions, cream, and cheeses.

                Return the pork chops: Place the seared pork chops on top of the layered potato casserole. Cover the dish tightly with aluminum foil.

                  Bake: Place the casserole in the preheated oven and bake for 45 minutes. After that, remove the foil and bake for an additional 15-20 minutes, until the potatoes are tender and the top is bubbly and golden brown.

                    Serve: Once baked, let the casserole sit for about 10 minutes before serving. Garnish with chopped fresh parsley for a pop of color.
