8 mozzarella sticks

8 strips of bacon

1 cup all-purpose flour

2 large eggs, beaten

1 cup panko breadcrumbs

1 tablespoon paprika

1 teaspoon cayenne pepper (adjust for spice preference)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1/4 cup Nashville hot chicken seasoning (or your homemade blend)

1 cup ranch dressing (for dipping)

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the mozzarella sticks: Freeze the mozzarella sticks for at least 30 minutes until they're firm; this helps them keep their shape while cooking.

      Wrap with bacon: Take a frozen mozzarella stick, and wrap it with a strip of bacon, securing the ends with toothpicks if necessary. Repeat with all the mozzarella sticks.

        Set up your breading station: In one bowl, place flour mixed with a pinch of salt and pepper. In a second bowl, add the beaten eggs. In a third bowl, mix the panko breadcrumbs, paprika, cayenne pepper, garlic powder, onion powder, and the Nashville hot seasoning.

          Coat the bacon-wrapped sticks: Roll each bacon-wrapped mozzarella stick in the flour, then dip it into the beaten eggs, and finally coat it in the spicy breadcrumb mixture. Ensure each stick is evenly coated.

            Bake: Arrange the coated mozzarella sticks on the prepared baking sheet. Bake in the preheated oven for 15-20 minutes or until the bacon is crispy and the cheese is melting. For extra crispiness, you can broil them for the last 2 minutes.
