Ingredients
  

2 tablespoons olive oil

1 medium onion, diced

3 garlic cloves, minced

1 tablespoon fresh ginger, grated

1 teaspoon turmeric powder

1 teaspoon ground cumin

1/2 teaspoon black pepper

1 lb (450g) chicken breast, cut into bite-sized pieces

4 cups chicken broth (low-sodium)

2 cups kale, chopped

1 cup carrots, sliced

1 cup celery, diced

1 tablespoon lemon juice

Salt to taste

Fresh parsley for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic, grated ginger, turmeric powder, ground cumin, and black pepper. Cook for another 2-3 minutes until fragrant.

      Add the chicken pieces to the pot and sauté until they are lightly browned, about 5-7 minutes.

        Pour in the chicken broth and bring the mixture to a simmer.

          Once simmering, add the chopped kale, sliced carrots, and diced celery. Stir well and cover, cooking for about 15-20 minutes until the vegetables are tender and the chicken is cooked through.

            Stir in the lemon juice and season with salt to taste.

              Remove from heat and let the soup sit for a few minutes to develop flavors.

                Serve hot, garnished with fresh parsley on top. Enjoy!
