2 cups fresh corn kernels (or frozen corn, thawed)

1 cup whole milk

1/2 cup sour cream

4 large eggs

1/4 cup unsalted butter, melted

1/4 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon onion powder

1/2 cup shredded cheddar cheese (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 2-quart baking dish with butter or non-stick spray.

    In a large mixing bowl, combine the corn kernels, whole milk, sour cream, and melted butter. Mix until blended.

      Add the eggs one at a time, beating well after each addition. This ensures that the mixture is nice and fluffy.

        In another bowl, whisk together the sugar, baking powder, salt, black pepper, and onion powder. Slowly add this dry mixture to the wet corn mixture, stirring until just combined.

          If using, fold in the shredded cheddar cheese for an extra cheesy kick.
