8 oz fettuccine pasta

2 chicken breasts, diced

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust to taste)

1 cup corn (fresh or frozen)

1 red bell pepper, diced

1 cup black beans, rinsed and drained

1 cup cherry tomatoes, halved

1 cup chicken broth

1/2 cup cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Grated cheese (optional, for topping)

Instructions
 

Cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.

    In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with smoked paprika, cumin, garlic powder, onion powder, cayenne, salt, and pepper. Cook until the chicken is golden brown and cooked through, about 6-8 minutes.

      Add the corn, red bell pepper, black beans, and cherry tomatoes to the skillet. Stir everything together and cook for another 3-4 minutes until the veggies are tender.

        Pour in the chicken broth and let it simmer for about 5 minutes, allowing the flavors to meld.

          Stir in the cooked pasta, lime juice, and chopped cilantro, combining everything until the pasta is well coated with the sauce. Adjust seasoning with additional salt, pepper, or lime juice if desired.

            Serve hot, garnished with grated cheese and additional cilantro if desired.
