8 oz spaghetti

2 cups fresh spinach, washed and chopped

1 cup sun-dried tomatoes, packed in oil, drained and chopped

1 cup heavy cream

2 cloves garlic, minced

1 small onion, finely chopped

1 tablespoon olive oil

1 teaspoon Italian seasoning

Salt and pepper, to taste

1/2 cup grated Parmesan cheese, plus more for serving

Fresh basil leaves, for garnish (optional)

Instructions
 

Cook the Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

    Sauté the Aromatics: In a large skillet over medium heat, add olive oil. Once hot, add the chopped onion and garlic. Cook for about 2-3 minutes until the onion becomes translucent and fragrant.

      Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and Italian seasoning. Cook for another 2 minutes, allowing the flavors to meld.

        Make the Cream Sauce: Reduce the heat to low and pour in the heavy cream. Cook gently for about 5 minutes, stirring occasionally until the sauce thickens slightly. If the sauce is too thick, add reserved pasta water until desired consistency is reached.

          Incorporate Spinach: Add the chopped spinach to the cream sauce, stirring until the spinach wilts down, which should take about 2 minutes.

            Combine Pasta and Sauce: Add the cooked spaghetti to the skillet, tossing to coat the pasta in the sun-dried tomato cream sauce. Add grated Parmesan cheese, salt, and pepper to taste. Stir well to combine.

              Serve: Plate the spaghetti and sauce. Top with additional Parmesan cheese and garnish with fresh basil leaves, if desired. Enjoy your delicious dish!
