Ingredients
  

1 cup mashed sweet potatoes (cooked and cooled)

1 cup all-purpose flour

2 tablespoons brown sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1 cup milk (or non-dairy alternative)

2 large eggs

1 teaspoon vanilla extract

1/4 cup melted coconut oil (or butter)

Optional toppings: maple syrup, Greek yogurt, chopped nuts, or fresh fruit

Instructions
 

Preheat your waffle iron according to the manufacturer’s instructions.

    In a large mixing bowl, combine the mashed sweet potatoes, flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. Mix well.

      In a separate bowl, whisk together the milk, eggs, vanilla extract, and melted coconut oil until well combined.

        Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are okay.

          Lightly grease the waffle iron with cooking spray or a little coconut oil. Pour the batter into the waffle iron, using about 1/2 cup of batter for each waffle (adjust according to your waffle iron’s size).

            Close the waffle iron and cook until the waffles are golden and crisp, about 5-7 minutes.

              Carefully remove the waffles and keep warm in an oven set to low heat while you cook the remaining batter.

                Serve the waffles hot with your choice of toppings such as maple syrup, a dollop of Greek yogurt, chopped nuts, or fresh fruit.
