4 boneless, skinless chicken breasts

1 can (14 oz) coconut milk

2 tablespoons coconut oil

1 large onion, finely chopped

3 cloves garlic, minced

1-2 red chili peppers, finely chopped (adjust based on heat preference)

1 tablespoon fresh ginger, grated

2 teaspoons smoked paprika

1 teaspoon ground cumin

Salt and black pepper, to taste

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Cooked rice, for serving

Marinate the Chicken: In a large bowl, mix together the coconut milk, lime juice, smoked paprika, ground cumin, salt, and black pepper. Add chicken breasts, cover, and let them marinate for at least 30 minutes in the refrigerator.

    Sauté the Base: In a large skillet over medium heat, add coconut oil. Once hot, add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic, chopped chili peppers, and grated ginger. Cook for another 2 minutes until fragrant.

      Cook the Chicken: Remove the chicken from the marinade (reserve the marinade) and add to the skillet. Sear the chicken on both sides for about 4-5 minutes until lightly browned.

        Add Coconut Sauce: Pour the reserved coconut marinade into the skillet, stir gently, and bring to a simmer. Reduce the heat to low, cover, and let the chicken cook through for about 15-20 minutes, or until fully cooked.

          Adjust Seasoning: Taste the sauce and adjust salt and pepper as needed. If you prefer a thicker sauce, you can let it simmer uncovered for an additional 5-10 minutes.

            Serve: Once the chicken is cooked, remove from heat and sprinkle with fresh cilantro. Serve with cooked rice, ensuring to spoon some of the flavorful coconut sauce over the top.
