Rinse the rice under cold water until the water runs clear. Drain and set aside.
In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion, bell pepper, and celery; sauté for about 5 minutes or until the vegetables are softened.
Stir in the minced garlic and ground chicken (or turkey). Cook, breaking the meat apart with a spatula, until browned and fully cooked, about 7-10 minutes.
Once the meat is browned, add the Cajun seasoning, cayenne pepper, salt, and pepper. Mix well to combine all the spices with the meat and vegetables.
Add the rinsed rice to the skillet, stirring to coat the rice with the mixture. Pour in the chicken broth and diced tomatoes. If using, add Worcestershire sauce for added flavor.
Bring the mixture to a boil. Reduce heat to low, cover, and simmer for approximately 20 minutes, or until the rice is tender and has absorbed all the liquid.
Once cooked, remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
Garnish with chopped green onions and fresh parsley for a burst of color and freshness.
