1 cup black beans, drained and rinsed

1 cup cherry tomatoes, quartered

1 avocado, diced

1/2 cup shredded cheddar cheese

1 chipotle pepper in adobo sauce, minced

1/2 teaspoon cumin powder

Salt and pepper to taste

Prep the Ingredients: Gather all your ingredients. Mince the chipotle pepper and set aside, along with the diced avocado, quartered tomatoes, and black beans.

    Cook the Eggs: In a large skillet over medium heat, add the olive oil. Once hot, crack the eggs into the skillet and scramble gently for about 2-3 minutes until softly cooked. Season with cumin, salt, and pepper, and stir in the minced chipotle pepper for a spicy kick.

      Warm the Tortillas: While the eggs are cooking, warm the tortillas in a separate pan or microwave for about 15-20 seconds to make them pliable.
