Ingredients
  

2 cups fresh corn kernels (about 4 ears of corn)

1 ripe mango, diced

1 small habanero pepper, finely chopped (remove seeds for less heat)

1/2 red onion, finely diced

1/2 red bell pepper, diced

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 teaspoon olive oil

Salt and pepper to taste

Instructions
 

Prepare the Corn: If using fresh corn, bring a pot of water to a boil and add the corn. Cook for about 3-5 minutes until tender. Drain and cool. If using frozen corn, thaw and drain excess water.

    Combine the Ingredients: In a large mixing bowl, combine the cooked corn, diced mango, chopped habanero, red onion, red bell pepper, and cilantro.

      Dress the Salsa: Drizzle lime juice and olive oil over the mixture. Season with salt and pepper to taste.

        Toss and Chill: Gently toss all ingredients together until well combined. Taste and adjust seasoning if necessary.

          Serve: Let the salsa chill in the refrigerator for about 30 minutes to allow the flavors to meld. Serve with tortilla chips, in tacos, or as a topping for grilled meats.
