8 oz (225g) rice noodles

4 tablespoons vegetable oil

6 cloves garlic, minced

2-3 red chilies, sliced (adjust for spice preference)

2 tablespoons soy sauce

1 tablespoon chili paste (such as sambal oelek)

1 tablespoon sugar

1 teaspoon sesame oil

1 cup snow peas, trimmed

½ cup carrots, julienned

2 green onions, chopped

Sesame seeds for garnish

Instructions
 

Cook the rice noodles according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    In a large skillet or wok, heat the vegetable oil over medium heat.

      Add the minced garlic and sliced red chilies to the pan, sautéing until fragrant, about 1-2 minutes. Be careful not to let the garlic burn.

        Stir in the soy sauce, chili paste, sugar, and sesame oil. Mix well to create a flavorful sauce.

          Add the snow peas and julienned carrots to the skillet, stir-frying for about 3-4 minutes until they are tender but still crisp.

            Add the cooked rice noodles into the skillet, tossing everything together until the noodles are evenly coated with the sauce and heated through, about 2-3 minutes.

              Remove from heat and fold in the chopped green onions.
