1 cup cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/2 teaspoon baking soda

1 cup buttermilk (or milk with 1 tablespoon vinegar added)

2 large eggs

1/4 cup vegetable oil

1 cup shredded sharp cheddar cheese

2-3 jalapenos, finely chopped (adjust based on heat preference)

1/4 cup honey or maple syrup (optional for a touch of sweetness)

Instructions
 

Preheat your oven to 400°F (200°C). Grease a 9-inch square baking pan or cast-iron skillet with butter or non-stick spray.

    In a large mixing bowl, combine the cornmeal, flour, baking powder, salt, and baking soda. Whisk together until well combined.

      In another bowl, whisk together the buttermilk, eggs, and vegetable oil until smooth. If using, add the honey or maple syrup.

        Pour the wet ingredients into the dry mixture and stir until just combined. Avoid over-mixing; it's okay to have some lumps.

          Fold in the shredded cheddar cheese and chopped jalapenos, ensuring they are evenly distributed throughout the batter.

            Pour the batter into the prepared baking pan and smooth the top with a spatula.
