For Spinach Fettuccine:

2 cups all-purpose flour

2 large eggs

1 cup fresh spinach, blanched and pureed

1/2 teaspoon salt

Water as needed

For Lobster Ravioli:

1 cup cooked lobster meat, chopped

1/2 cup ricotta cheese

1/4 cup grated Parmesan cheese

1 teaspoon lemon zest

Salt and pepper to taste

1 package of wonton wrappers (for easy preparation)

For Mussels & Meat Sauce:

1 lb mussels, cleaned and debearded

1 lb ground beef or Italian sausage

1 onion, diced

2 cloves garlic, minced

1 can (14 oz) crushed tomatoes

1 tablespoon tomato paste

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

Olive oil for cooking

Fresh basil for garnish (optional)

Instructions
 

Make the Spinach Fettuccine:

    - In a mixing bowl, combine the flour and salt. Create a well in the center and add the eggs and spinach puree. Gradually mix with your hands until it forms a dough.

      - Knead the dough for about 10 minutes until smooth. Wrap in plastic and let rest for 30 minutes.

        - Roll the dough out with a pasta machine or rolling pin to your desired thickness and cut into fettuccine noodles.

          Prepare the Lobster Ravioli Filling:

            - In a bowl, mix together the cooked lobster meat, ricotta cheese, Parmesan cheese, lemon zest, salt, and pepper until well combined.

              - Place a small spoonful of the lobster mixture on one half of each wonton wrapper. Wet the edges with water, fold over, and press to seal. Repeat until all filling is used.

                Cook the Mussels & Meat Sauce:

                  - In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until soft.

                    - Add minced garlic and sauté for another minute until fragrant. Then, add the ground meat and cook until browned.

                      - Stir in the crushed tomatoes, tomato paste, dried basil, oregano, salt, and pepper. Simmer for 15-20 minutes to let the flavors meld.

                        - Add the cleaned mussels and cover. Cook for about 5 minutes or until mussels open. Discard any that do not open.

                          Cook the Fettuccine:

                            - Bring a pot of salted water to a boil. Add the fettuccine and cook for 3-4 minutes until al dente. Drain and set aside.

                              Assembly:

                                - In a bowl, place a portion of the spinach fettuccine and top it with the mussel and meat sauce. Add lobster ravioli on the side.

                                  - Garnish with fresh basil and a drizzle of olive oil if desired.

                                    Serve:
