Ingredients
  

2 sirloin steaks (about 8 oz each)

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

4 tablespoons unsalted butter, softened

2 cloves garlic, minced

1 tablespoon fresh thyme leaves

1 tablespoon fresh parsley, finely chopped

4 large russet potatoes, cut into thick fries

Vegetable oil for frying

Optional: Fresh herbs for garnish (like thyme or parsley)

Prepare the fries: Rinse the cut potatoes in cold water to remove excess starch. Pat them dry with a paper towel. Heat vegetable oil in a deep fryer or a large pot to 350°F (175°C).

    Fry the potatoes: Cook the fries in batches for about 5-7 minutes until they are golden and crispy. Remove them with a slotted spoon and drain on paper towels. Season with salt immediately while hot.

      Season the steaks: While the fries are cooking, season both sides of the steaks generously with salt and pepper. Allow them to rest at room temperature for about 20 minutes.

        Make the herb butter: In a small bowl, combine the softened butter, minced garlic, thyme, and parsley. Mix well until all ingredients are fully incorporated. Set aside.

          Cook the steaks: Heat the olive oil in a cast-iron skillet over medium-high heat. Add the steaks and sear for 4-5 minutes on one side without moving them, until a crust forms. Flip and cook for another 4-5 minutes for medium-rare (adjust time for your desired doneness).

            Add herb butter: During the last minute of cooking, add a dollop of the herb butter to the skillet and spoon it over the steaks as it melts. Remove the skillet from heat and let the steaks rest for 5 minutes.

              Serve: Slice the steaks against the grain and serve immediately with the crispy fries and a generous spoonful of melted herb butter on top.
