Ingredients

8 oz linguine or spaghetti

1 lb sirloin steak, sliced thinly

2 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1/2 cup beef broth

1/2 cup heavy cream

1 cup cherry tomatoes, halved

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions

Cook the pasta: Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta and set aside.

Sear the steak: In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Season the sliced steak with salt and pepper. Once the oil is hot, add the steak to the pan in a single layer and cook for about 2-3 minutes on each side until browned and cooked to your preferred doneness. Remove from the skillet and set aside.

Sauté the aromatics: In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic, rosemary, and thyme; sauté for about 1 minute until fragrant.

Create the sauce: Pour in the beef broth and stir to deglaze the pan, scraping up any brown bits. Allow it to simmer for about 2 minutes. Then, lower the heat and stir in the heavy cream, bringing it to a gentle simmer. Add the cherry tomatoes and cook for an additional 3-4 minutes until they soften.

Combine: Add the cooked pasta and seared steak to the skillet. Toss everything together, adding reserved pasta water a little at a time if the sauce is too thick. Stir in the grated Parmesan cheese and season with additional salt and pepper if needed.

Serve: Plate the pasta and garnish with fresh basil leaves and more Parmesan cheese if desired.
