1.5 lbs flank steak, pounded to 1/2-inch thickness

3 tablespoons olive oil

4 cloves garlic, minced

1 large onion, finely sliced

2 cups cherry tomatoes, halved

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional for spice)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Crusty bread, for serving

Instructions
 

Prepare the Steak: Season both sides of the flank steak with salt, pepper, and a sprinkling of dried oregano. Let it come to room temperature for about 15 minutes.

    Sear the Steak: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the steak and sear for 3-4 minutes on each side until browned. Remove the steak from the skillet and set aside to rest.

      Cook the Aromatics: In the same skillet, add the remaining olive oil, minced garlic, and sliced onion. Sauté for about 4-5 minutes until the onions are translucent and fragrant.

        Add Tomatoes and Seasoning: Add the halved cherry tomatoes, dried basil, red pepper flakes (if using), and a pinch of salt to the skillet. Cook for about 8-10 minutes until the tomatoes soften and release their juices, creating a chunky sauce.

          Simmer the Steak: Return the steak to the skillet, nestling it into the sauce. Cover and simmer for about 10 minutes, allowing the flavors to meld.

            Finish and Serve: Once the steak is cooked to your desired doneness, remove from heat. Let it rest for a couple of minutes before slicing it against the grain. Serve the steak topped with the tomato sauce and garnished with fresh basil leaves.
