Ingredients

1 lb flank steak

1 tablespoon olive oil

2 cloves garlic, minced

1 tablespoon lime juice

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

8 small corn or flour tortillas

1 cup diced tomatoes

1 avocado, diced

1/2 cup chopped fresh cilantro

1/2 cup crumbled queso fresco (optional)

Lime wedges for serving

Instructions

Marinate the Steak: In a bowl, combine olive oil, minced garlic, lime juice, cumin, chili powder, salt, and pepper. Add the flank steak, ensuring it's evenly coated. Marinate for at least 30 minutes (or up to 2 hours in the fridge) to enhance the flavor.

Cook the Steak: Preheat a grill or skillet over medium-high heat. Remove the steak from the marinade and cook for about 5-7 minutes per side, depending on thickness and desired doneness (medium rare is recommended). Let it rest for 5 minutes after cooking.

Prepare the Tacos: Heat the tortillas on the grill or in a dry skillet for about 30 seconds on each side until warm and pliable.

Slice the Steak: Thinly slice the rested steak against the grain.

Assemble the Tacos: Place a few slices of steak on each tortilla. Top with diced tomatoes, avocado, and chopped cilantro. If desired, sprinkle with queso fresco.

Serve: Squeeze fresh lime juice over the top and serve with lime wedges on the side.
