4 boneless, skinless chicken thighs

1 cup apricot jam

1/4 cup soy sauce

2 tablespoons apple cider vinegar

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon olive oil

1 teaspoon sesame oil

1/2 teaspoon chili flakes (optional)

Salt and pepper to taste

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Cooked rice or quinoa (for serving)

Instructions
 

Marinate the Chicken: In a large bowl, mix the apricot jam, soy sauce, apple cider vinegar, minced garlic, grated ginger, olive oil, sesame oil, and chili flakes. Season the chicken thighs with salt and pepper, then submerge them in the marinade. Cover and refrigerate for at least 30 minutes, or overnight for best results.

    Preheat the Oven: Set your oven to 375°F (190°C) to preheat while the chicken marinates.

      Bake the Chicken: Remove the chicken from the marinade and place it in a baking dish. Pour the remaining marinade over the chicken. Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through and the glaze is sticky and caramelized, basting occasionally with the sauce.
