Sticky BBQ Pork Sliders

Ingredients
  

2 lbs pork shoulder, trimmed and cut into cubes

1 cup BBQ sauce (your favorite brand or homemade)

½ cup apple cider vinegar

1 onion, thinly sliced

4 cloves garlic, minced

1 tsp smoked paprika

1 tsp onion powder

1 tsp garlic powder

½ tsp cayenne pepper (optional, for heat!)

Salt and pepper, to taste

12 slider buns

1 cup coleslaw mix

½ cup mayonnaise

1 tbsp apple cider vinegar (for coleslaw)

Fresh parsley, chopped (for garnish)

Instructions
 

Slow Cook the Pork:

    - In a slow cooker, combine the pork shoulder cubes, sliced onion, minced garlic, smoked paprika, onion powder, garlic powder, cayenne pepper, apple cider vinegar, salt, and pepper. Pour in the BBQ sauce over the top.

      - Stir to ensure all ingredients are well mixed, cover, and set the slow cooker on low for 8 hours or high for 4-5 hours until the pork is tender and easily shreds.

        Prepare the Coleslaw:

          - While the pork is cooking, prepare the coleslaw by combining the coleslaw mix, mayonnaise, and apple cider vinegar in a bowl. Mix until well combined and set aside in the refrigerator.

            Shred the Pork:

              - Once the pork is cooked, remove it from the slow cooker and shred it using two forks. Return the shredded pork to the cooker and stir it into the remaining BBQ sauce to coat.

                Assemble the Sliders:

                  - Lightly toast the slider buns if desired. Place a generous scoop of the sticky BBQ pork on the bottom half of each bun. Top with a spoonful of coleslaw, and then place the top half of the bun on top.

                    Serve:

                      - Arrange the sliders on a platter and garnish with chopped parsley. Serve warm and enjoy the sticky, tangy goodness!
