1 cup graham cracker crumbs

1/2 cup unsalted butter, melted

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup fresh strawberries, diced

1/2 cup whipped cream

1/4 cup strawberry jam

1/4 cup toasted coconut flakes (for crunch)

Fresh strawberries (for garnish)

Instructions
 

In a medium bowl, combine the graham cracker crumbs and melted butter. Mix well until the crumbs are evenly coated.

    Press about a tablespoon of the mixture firmly into the bottom of each mini muffin tin cup to form the crust. Use the back of a spoon or your fingers for this step.

      In a separate mixing bowl, beat the softened cream cheese until smooth and creamy using a hand mixer.

        Add the powdered sugar and vanilla extract to the cream cheese and mix until well incorporated.

          Gently fold in the diced strawberries and whipped cream into the cream cheese mixture until evenly distributed.

            Spoon the cheesecake filling over the graham cracker crusts in the muffin tin, filling each cup about three-quarters full.

              Top each cheesecake bite with a dollop of strawberry jam and sprinkle with toasted coconut flakes.

                Place the muffin tin in the refrigerator and chill for at least 2 hours, or until set.

                  Once chilled, carefully remove the cheesecake bites from the tin and place on a serving platter.

                    Garnish with additional fresh strawberries on top for color and presentation.
