1 cup all-purpose flour

2 tablespoons sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk

1 large egg

2 tablespoons melted butter

1 teaspoon vanilla extract

1/2 cup cream cheese, softened

1/4 cup powdered sugar

1/2 teaspoon vanilla extract (for filling)

1 cup fresh strawberries, sliced

Extra butter or oil for cooking

Instructions
 

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

    In a separate bowl, mix the buttermilk, egg, melted butter, and vanilla extract until smooth.

      Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix. The batter should be thick and slightly lumpy.

        In another bowl, beat the softened cream cheese with the powdered sugar and 1/2 teaspoon of vanilla extract until smooth. Set this mixture aside.

          Preheat a non-stick skillet or griddle over medium heat and lightly coat it with butter or oil.

            Pour about 1/4 cup of pancake batter onto the skillet for each pancake. Cook for about 2-3 minutes or until bubbles form on the surface.

              Spoon about 1 tablespoon of the cream cheese filling in the center of each pancake and add a few strawberry slices on top.

                Carefully spoon another tablespoon of pancake batter over the filling to cover it.

                  Flip the pancakes and cook for another 2-3 minutes or until golden brown.

                    Remove from the skillet and keep warm. Repeat with the remaining batter and filling.

                      Serve the pancakes stacked high, topped with additional fresh strawberries and a dusting of powdered sugar.
