1 cup fresh strawberries, hulled and diced

1/2 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 cup powdered sugar (for dusting)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a bowl, cream together the softened butter and granulated sugar until light and fluffy. This should take about 3-4 minutes.

      Add the egg and vanilla extract to the mixture, beating until well combined. If using lemon zest, add it now.

        In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

          Gently fold in the diced strawberries, being careful not to overmix, as this can make the cookies tough.

            Using a tablespoon, drop spoonfuls of the cookie dough onto the prepared baking sheet, leaving enough space between each cookie to allow for spreading.

              Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers will look slightly soft but will firm up as they cool.

                Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
