Ingredients
  

1 ½ cups fresh strawberries, hulled and sliced

1 cup granulated sugar, divided

1 tablespoon lemon juice

1 cup heavy whipping cream

1 (8 oz) package cream cheese, softened

1 teaspoon vanilla extract

1 pre-made graham cracker crust

2 tablespoons cornstarch

½ cup water

Fresh mint leaves for garnish (optional)

Instructions
 

In a mixing bowl, combine the sliced strawberries, ½ cup of granulated sugar, and lemon juice. Toss gently to coat the strawberries and let them sit for about 30 minutes to release their juices.

    In a medium saucepan, combine the remaining ½ cup of sugar, cornstarch, and water. Stir over medium heat until it thickens and becomes clear. This should take about 5-7 minutes. Remove from heat and let it cool.

      Once cooled, add the berry mixture to the cornstarch mixture, stirring gently to combine. Let this mixture cool to room temperature.

        In a separate bowl, whip the heavy cream until soft peaks form. In another bowl, beat the cream cheese and vanilla extract together until smooth.

          Gently fold the whipped cream into the cream cheese mixture until fully combined, then fold in the cooled strawberry mixture until just blended.

            Pour the strawberry filling into the pre-made graham cracker crust, smoothing the top with a spatula.

              Cover the pie with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow it to set.

                Before serving, garnish with fresh mint leaves if desired.
