2 cups fresh strawberries, hulled and sliced

1/4 cup granulated sugar, divided

1 teaspoon vanilla extract

1 cup heavy whipping cream

1/4 teaspoon salt

1 tablespoon gelatin powder

2 tablespoons cold water

Zest of 1 lemon (optional, for brightness)

In a medium bowl, combine the sliced strawberries and 2 tablespoons of sugar. Stir gently to coat the strawberries and allow them to macerate for about 15 minutes, which will draw out their juices.

    After the strawberries have rested, blend them in a blender or food processor until smooth. Strain the mixture through a fine-mesh sieve into a clean bowl to remove seeds, pressing down with a spatula. You should have about 1 cup of strawberry puree.

      In a small bowl, sprinkle the gelatin over cold water and let it bloom for about 5 minutes until it becomes spongy.

        In a small saucepan over low heat, add the bloomed gelatin to the strawberry puree, stirring until fully dissolved (about 1-2 minutes). Remove from heat and stir in the vanilla extract and lemon zest (if using). Allow the mixture to cool slightly.

          In a large mixing bowl, beat the heavy whipping cream, remaining sugar, and salt together with an electric mixer until soft peaks form. Be careful not to overwhip.

            Gently fold the cooled strawberry mixture into the whipped cream, being careful not to deflate the cream. Mix until well combined and there are no visible streaks.

              Spoon the mousse into serving glasses or bowls, dividing it evenly.

                Refrigerate for at least 2-3 hours or until the mousse is set.
