2 cups fresh strawberries, hulled and sliced

1 cup granulated sugar, divided

3 tablespoons cornstarch

1 tablespoon fresh lemon juice

1 teaspoon vanilla extract

1/4 teaspoon salt

1 pre-made pie crust (store-bought or homemade)

1 tablespoon butter, cut into small pieces

Whipped cream for serving (optional)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a medium bowl, combine the sliced strawberries and 3/4 cup of the sugar. Toss the strawberries gently to coat in the sugar, and let them sit for about 10-15 minutes to macerate.

      In another bowl, whisk together the cornstarch, remaining 1/4 cup of sugar, and salt. Once the strawberries have released some of their juices, add this mixture to the strawberry bowl. Stir in the lemon juice and vanilla extract until everything is well combined.

        Pour the strawberry filling into the pre-made pie crust, spreading it out evenly. Dot the top with small pieces of butter.

          Bake the pie in the preheated oven for about 35-40 minutes, or until the strawberries are bubbling and the crust is golden brown. If the edges of the crust begin to brown too quickly, shield them with aluminum foil.

            Once baked, remove the pie from the oven and let it cool on a wire rack for at least one hour, allowing it to set.

              Serve slices of the pie topped with a dollop of whipped cream if desired.
