Ingredients
  

2 cups fresh strawberries, hulled and halved

1 cup granulated sugar

1/2 cup water

1 teaspoon vanilla extract

1 tablespoon lemon juice

Instructions
 

In a medium saucepan, combine the halved strawberries, sugar, and water.

    Place the saucepan over medium heat and stir gently until the sugar is dissolved.

      Once the mixture is bubbling, reduce the heat to low and simmer for about 10 minutes, stirring occasionally.

        Use a fork or a potato masher to mash the strawberries and release their juices.

          After mashing, raise the heat to medium and let it boil for an additional 5 minutes, stirring frequently to avoid sticking.

            Remove the saucepan from heat and stir in the vanilla extract and lemon juice.

              Let the syrup cool for a few minutes, then strain it through a fine-mesh sieve into a clean jar to remove the strawberry pulp (if desired; keeping some pulp for a thicker syrup is also great!).

                Allow the syrup to cool completely before sealing the jar.

                  Store the syrup in the refrigerator for up to two weeks.
