2 cups fresh strawberries, hulled and sliced

1 cup mascarpone cheese

1 cup heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup strong brewed coffee, cooled

2 tablespoons almond extract

20 ladyfinger cookies

Cocoa powder for dusting

Fresh mint leaves for garnish

In a medium bowl, combine the sliced strawberries with 1 tablespoon of powdered sugar and let them macerate for about 15 minutes to release some juice.

    In a large mixing bowl, whip the heavy cream until stiff peaks form. Gradually add 1/2 cup of powdered sugar and the vanilla extract while continuing to whip until well combined.

      Gently fold the mascarpone cheese into the whipped cream mixture until smooth and creamy, being careful not to deflate the whipped cream.

        In a shallow dish, mix together the brewed coffee and almond extract.

          Dip each ladyfinger into the coffee mixture for about 1 second, ensuring they soak without becoming too soggy.

            Arrange the dipped ladyfingers in a single layer at the bottom of a 9x9 inch serving dish.

              Spread half of the mascarpone mixture over the ladyfingers, smoothing it out evenly.

                Layer half of the macerated strawberries over the mascarpone mixture.

                  Repeat the process by adding another layer of dipped ladyfingers followed by the remaining mascarpone mixture and the rest of the strawberries.

                    Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight to allow the flavors to meld.

                      Before serving, dust the top with cocoa powder and garnish with fresh mint leaves for a pop of color.
