1 cup cooked jasmine rice

1 lb chicken breast, diced

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1/2 red onion, diced

1 avocado, sliced

1/4 cup fresh cilantro, chopped

1/2 cup crumbled cotija cheese

1 lime, juiced

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Optional: hot sauce, for serving

Prepare the Chicken: In a mixing bowl, combine the diced chicken with olive oil, chili powder, garlic powder, smoked paprika, salt, and pepper. Coat evenly. In a skillet over medium heat, cook the seasoned chicken for about 7-10 minutes, or until it’s cooked through and golden brown. Remove from heat and set aside.

    Cook the Corn: In the same skillet, add corn kernels and red onion. Sauté for about 3-5 minutes, allowing the corn to get slightly charred and the onions to soften. Remove from heat.

      Combine Ingredients: In a large bowl, combine cooked rice, the sautéed corn and onion, and cooked chicken. Drizzle lime juice over the mixture and toss gently to combine all flavors.

        Assemble the Bowls: Divide the chicken rice mixture into serving bowls. Top each bowl with diced red bell pepper, avocado slices, fresh cilantro, and a generous sprinkle of cotija cheese.
