Stuffed Breakfast Pretzel Rolls

Ingredients
  

1 ½ cups warm water (110°F to 115°F)

2 tablespoons granulated sugar

1 packet (2 ¼ tsp) active dry yeast

4 cups all-purpose flour

½ cup baking soda

1 teaspoon salt

1 egg, beaten (for egg wash)

1 cup shredded cheddar cheese

1 cup cooked breakfast sausage, crumbled

½ cup scrambled eggs (about 2 large eggs)

¼ cup finely chopped green onions

Sea salt, for sprinkling

Instructions
 

In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.

    Gradually add flour and salt to the yeast mixture, mixing until a dough forms. Knead on a floured surface for about 5-7 minutes until the dough is smooth and elastic.

      Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

        Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

          On a floured surface, punch down the dough and divide it into 10-12 equal pieces. Roll each piece into a ball.

            Take each ball and flatten it slightly, adding a tablespoon of cheddar cheese, a tablespoon of crumbled sausage, a tablespoon of scrambled eggs, and a sprinkle of green onions in the center.

              Carefully fold the edges of the dough over the filling and pinch to seal. Shape it into a smooth ball and place it seam-side down on the prepared baking sheet.

                In a large pot, bring 10 cups of water and the baking soda to a gentle simmer. Carefully lower each pretzel roll into the water, cooking for 30 seconds on each side. Remove them with a slotted spoon and return them to the baking sheet.

                  Brush the tops of the rolls with the beaten egg and sprinkle with sea salt.

                    Bake in the preheated oven for 12-15 minutes, or until they are golden brown and puffy. Allow to cool slightly before serving.
