4 salmon fillets (skinless, about 6 oz each)

1 cup fresh spinach, chopped

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1 garlic clove, minced

1 tablespoon lemon juice

1 teaspoon dill (fresh or dried)

Salt and pepper to taste

1 tablespoon olive oil

Zest of 1 lemon

Toothpicks or kitchen twine for securing

Instructions
 

Preheat your oven to 375°F (190°C). Line a baking dish with parchment paper.

    In a mixing bowl, combine the chopped spinach, ricotta cheese, grated Parmesan cheese, minced garlic, lemon juice, dill, salt, and pepper. Stir until well mixed to form the filling.

      Lay the salmon fillets flat on a cutting board, skin side down. Season the fillets with salt, pepper, and lemon zest.

        Spread an even layer of the spinach and ricotta filling over each fillet, leaving a small border around the edges.

          Gently roll each fillet starting from one end to the other, creating pinwheels. Secure the ends with toothpicks or tie them with kitchen twine to hold them together.

            Heat olive oil in a skillet over medium heat. Once hot, place the salmon pinwheels seam side down in the skillet for about 2-3 minutes until golden brown.

              Carefully transfer the browned pinwheels to the prepared baking dish. Bake in the preheated oven for 15-20 minutes or until the salmon is cooked through and flakes easily with a fork.

                Remove from the oven and let them rest for about 5 minutes before slicing them into pinwheels.
