Stuffed Sole With Scallops and Crabmeat

Ingredients
  

4 sole fillets

1 cup scallops, chopped

1 cup crabmeat, picked through for shells

1 small onion, finely diced

2 cloves garlic, minced

1/2 cup breadcrumbs

1/4 cup fresh parsley, chopped

1/4 cup grated Parmesan cheese

2 tablespoons lemon juice

2 tablespoons olive oil

Salt and pepper to taste

Lemon wedges, for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and sauté for another minute until fragrant.

      Add the chopped scallops to the skillet and cook for about 3 minutes until they are just opaque. Remove from heat and let cool slightly.

        In a large mixing bowl, combine the scallop mixture, crabmeat, breadcrumbs, parsley, Parmesan cheese, lemon juice, and season with salt and pepper. Mix well to combine.

          Lay the sole fillets on a clean surface; season them lightly with salt and pepper. Spoon an even amount of the filling onto the center of each fillet.

            Carefully fold the sole fillets over the filling to create a pocket. Place the stuffed fillets seam-side down in a greased baking dish.

              Drizzle the remaining tablespoon of olive oil over the fillets and cover the dish with foil.

                Bake in the preheated oven for 20 minutes, then remove the foil and continue to bake for another 10 minutes, or until the fish flakes easily with a fork.

                  Serve the stuffed sole garnished with lemon wedges.
