Ingredients

2 ribeye steaks (about 1 inch thick)

Salt and black pepper to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 tablespoon Dijon mustard

1 teaspoon Worcestershire sauce (optional for extra depth)

2 tablespoons fresh parsley, chopped (for garnish)

Instructions

Prepare the Steak: Let the ribeye steaks come to room temperature (about 30 minutes) before cooking. Pat them dry with paper towels and season generously with salt and black pepper on both sides.

Sear the Steaks: In a large skillet, heat the olive oil over medium-high heat. Once the oil is shimmering, carefully place the steaks in the skillet. Sear for 4-5 minutes on each side for medium-rare, or until they reach your desired doneness. Use a meat thermometer for best accuracy (130°F for medium-rare).

Rest the Steaks: Once cooked, transfer the steaks to a plate, cover loosely with aluminum foil, and let them rest while you prepare the sauce (this allows the juices to redistribute).

Make the Garlic Cream Sauce: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn it.

Add Cream: Pour in the heavy cream, and stir to combine with the garlic. Add in the Dijon mustard and Worcestershire sauce, if using. Let the mixture simmer gently for about 3-4 minutes, allowing it to thicken slightly.

Finish and Serve: Once the sauce has thickened, remove the skillet from heat, and taste to adjust seasoning with salt and pepper if needed. Slice the rested steaks and plate them. Generously drizzle the garlic cream sauce over the top and garnish with chopped fresh parsley.
