Ingredients
  

1 cup fresh or frozen blueberries

1/2 cup unsweetened sparkling water

1/2 cup cream or coconut cream

1 tablespoon sugar-free blueberry syrup (or sugar-free sweetener of choice)

1 tablespoon fresh lemon juice

Ice cubes

Fresh mint leaves for garnish

Instructions
 

In a small saucepan, add the fresh or frozen blueberries over medium heat.

    Cook the blueberries for about 5-7 minutes, mashing them with a fork until they form a thick, syrupy consistency.

      Remove from heat and let it cool slightly before straining through a fine mesh sieve to extract the juice. Discard the solids.

        In a glass, combine the blueberry juice, sugar-free blueberry syrup, and fresh lemon juice. Stir well.

          Fill the glass with ice cubes.

            Slowly pour the sparkling water over the ice & blueberry mixture until the glass is three-quarters full.

              Gently stir to combine the ingredients.
