2 medium zucchinis (zoodles)

1 pound shrimp, peeled and deveined

1 cup cherry tomatoes, halved

1 bell pepper, thinly sliced

1 avocado, diced

1/4 cup fresh basil, chopped

2 tablespoons olive oil

1 tablespoon lemon juice

1 teaspoon garlic powder

Salt and pepper to taste

Crushed red pepper flakes (optional, for a kick)

Prepare the Zoodles: Using a spiralizer or vegetable peeler, create zucchini noodles (zoodles) from the zucchinis. Set them aside.

    Cook the Shrimp: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the shrimp, sprinkle with garlic powder, salt, and pepper, then cook for 3-4 minutes until they turn pink and opaque. Transfer the cooked shrimp to a plate and set aside.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Toss in the bell pepper and cherry tomatoes, sautéing for about 4-5 minutes until softened.

        Combine Ingredients: Add the zoodles to the skillet and mix well with the vegetables, cooking for an additional 2-3 minutes until the zoodles are slightly tender (but still crunchy).

          Finish the Dish: Add the cooked shrimp back into the skillet, then sprinkle with lemon juice, chopped basil, and crushed red pepper flakes if you like some heat. Toss gently to combine all ingredients. Adjust seasoning with salt and pepper as desired.

            Serve: Assemble the zoodle mixture into bowls and top each with diced avocado. Garnish with additional basil if desired.
