Ingredients
  

1 cup quinoa, rinsed

2 cups water

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (any color), diced

1 cup corn (fresh or frozen)

1 avocado, sliced

1 cup mixed greens (spinach, arugula)

2 tablespoons olive oil

Salt and pepper to taste

For the Lemon Tahini Drizzle:

3 tablespoons tahini

2 tablespoons lemon juice

1 tablespoon maple syrup or honey (for sweetness)

1-2 tablespoons water (to thin)

Salt to taste

Cook the Quinoa: In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and water is absorbed. Remove from heat and let it cool.

    Prepare the Veggies: While the quinoa is cooking, chop the cherry tomatoes, cucumber, bell pepper, and slice the avocado. If using frozen corn, thaw it under warm water or microwave it for a minute.

      Make the Lemon Tahini Drizzle: In a small mixing bowl, whisk together tahini, lemon juice, maple syrup (or honey), and a pinch of salt. Add water a tablespoon at a time until you achieve your desired consistency – it should be pourable but not too runny.

        Assemble the Bowl: In a large bowl, layer the cooled quinoa, mixed greens, cherry tomatoes, cucumber, bell pepper, corn, and avocado.

          Drizzle and Toss: Generously drizzle the lemon tahini sauce over the veggie bowl. Toss gently to combine, ensuring the sauce coats all the ingredients evenly.

            Season to Taste: Add salt and pepper as needed, and drizzle with extra olive oil if desired.
