Ingredients
  

12 oz tortellini (fresh or frozen)

1 cup sun-dried tomatoes, packed in oil, chopped

1 cup cherry tomatoes, halved

1/2 cup black olives, sliced

1 cup fresh spinach, roughly chopped

1/2 cup feta cheese, crumbled

1/4 cup fresh basil, chopped

1/4 cup red onion, finely diced

3 tablespoons olive oil

2 tablespoons balsamic vinegar

2 cloves garlic, minced

Salt and pepper, to taste

Instructions
 

Cook the Tortellini: In a large pot of boiling salted water, cook the tortellini according to package instructions until they are al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, salt, and pepper until well combined.

      Combine Ingredients: In a large mixing bowl, combine the cooked tortellini, sun-dried tomatoes, cherry tomatoes, black olives, spinach, feta cheese, basil, and red onion.

        Add Dressing: Pour the dressing over the tortellini mixture and gently toss to combine until everything is evenly coated.

          Chill the Salad: Cover the bowl with plastic wrap or a lid and refrigerate the pasta salad for at least 30 minutes to allow the flavors to meld.
