Ingredients
  

1 ½ cups orzo pasta

3 cups vegetable broth

1 cup sundried tomatoes (packed in oil, drained and chopped)

1 cup Boursin cheese (garlic and herbs flavor)

½ cup grated Parmesan cheese

1 cup fresh spinach, chopped

2 cloves garlic, minced

1 small onion, diced

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional)

2 tablespoons olive oil

Salt and pepper to taste

Fresh basil for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Orzo: In a medium saucepan, bring the vegetable broth to a boil. Add the orzo and cook for about 8-10 minutes until al dente. Drain and set aside.

      Sauté Veggies: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1-2 minutes, stirring frequently to avoid burning.

        Combine Ingredients: Add the chopped sundried tomatoes, spinach, cooked orzo, oregano, and red pepper flakes (if using) to the skillet. Stir until the spinach is wilted.

          Mix Cheeses: In a separate bowl, combine the Boursin cheese and half of the grated Parmesan. Mix well until creamy and smooth.

            Combine Everything: Pour the cheese mixture into the orzo and vegetable mixture. Stir everything together until the pasta is evenly coated. Season with salt and pepper to taste.

              Transfer to Baking Dish: Transfer the orzo mixture into a lightly greased 9x13 inch baking dish and spread evenly.

                Top With Cheese: Sprinkle the remaining Parmesan cheese on top.

                  Bake: Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbly.

                    Garnish and Serve: Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh basil if desired before serving.
