1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

1 cup pineapple chunks (fresh or canned)

1 bell pepper (red or green), sliced

1 medium onion, chopped

2 cloves garlic, minced

1/4 cup soy sauce

1/4 cup apple cider vinegar

1/4 cup brown sugar

1 tablespoon cornstarch

1 tablespoon water

2 tablespoons vegetable oil

Salt and pepper to taste

Cooked rice, for serving

Instructions
 

In a large bowl, marinate the chicken pieces with soy sauce, apple cider vinegar, and salt and pepper for about 30 minutes.

    Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and sauté for 5-7 minutes until browned and cooked through. Remove the chicken from the skillet and set it aside.

      In the same skillet, add the remaining tablespoon of oil. Sauté the chopped onion and minced garlic for about 2 minutes until fragrant.

        Add the sliced bell pepper and pineapple chunks to the skillet, cooking for an additional 3-4 minutes until the vegetables soften.

          In a small bowl, mix the cornstarch and water together to create a slurry. Add it to the skillet, along with the brown sugar, stirring until combined.

            Return the cooked chicken to the skillet, toss everything together, and let it simmer for another 2-3 minutes until the sauce thickens. Adjust seasoning if necessary.

              Serve the sweet and sour chicken over a bed of fluffy cooked rice.
