Ingredients

500g boneless chicken breast, cut into bite-sized pieces

1 cup fresh pineapple chunks

1 bell pepper (red or yellow), diced

1 medium onion, chopped

1 cup snap peas or green beans, trimmed

3 tablespoons soy sauce

3 tablespoons apple cider vinegar

2 tablespoons brown sugar

2 tablespoons ketchup

1 tablespoon cornstarch

1 teaspoon minced ginger

1 teaspoon garlic powder

Salt and pepper to taste

2 tablespoons vegetable oil

Cooked rice for serving

Instructions

In a bowl, combine the soy sauce, apple cider vinegar, brown sugar, ketchup, cornstarch, ginger, garlic powder, and a pinch of salt and pepper. Whisk until smooth and set aside.

In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the chopped onion and diced bell pepper, stir-frying for about 2-3 minutes until they start to soften.

Add the chicken pieces to the skillet, cooking for 5-7 minutes or until the chicken is fully cooked and starts to brown on the edges.

Once the chicken is cooked, pour the sauce mixture over the chicken and vegetables. Stir well to coat everything evenly.

Add the pineapple chunks and snap peas or green beans, stirring gently. Allow the mixture to simmer for another 5 minutes, allowing the sauce to thicken slightly.

Taste and adjust seasoning with salt and pepper if necessary.

Serve your sweet and sour chicken over a bed of fluffy cooked rice, spooning extra sauce over the top for flavor.
