1 lb ground beef (or ground turkey for a lighter option)

1/2 cup breadcrumbs

1/4 cup green onions, finely chopped

1/4 cup milk

1 large egg

3 cloves garlic, minced

2 tablespoons soy sauce

2 tablespoons brown sugar

1 tablespoon gochujang (Korean chili paste)

1 tablespoon sesame oil

1 teaspoon ground ginger

1/2 teaspoon black pepper

In a large mixing bowl, combine the ground beef, breadcrumbs, green onions, milk, egg, minced garlic, soy sauce, brown sugar, gochujang, sesame oil, ground ginger, and black pepper.

    Using your hands or a spatula, mix all the ingredients until well incorporated. Be careful not to over-mix to keep the meatballs tender.

      Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

        Roll the meat mixture into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.

          Bake in the preheated oven for approximately 15-20 minutes, or until the meatballs are cooked through and slightly golden.

            While the meatballs are baking, you can prepare a glaze: in a small saucepan, combine 1 tablespoon gochujang, 2 tablespoons soy sauce, 1 tablespoon brown sugar, and 1 tablespoon sesame oil. Heat over medium, stirring until the sugar has dissolved, and the sauce has thickened slightly.

              Once the meatballs are done baking, drizzle the glaze over them and toss to coat evenly. Return them to the oven for an additional 5 minutes to allow the glaze to set.

                Remove from the oven and let cool slightly before serving. Garnish with sesame seeds and additional chopped green onions if desired.
