4 large sweet potatoes

1/2 cup brown sugar

1/4 cup unsalted butter, softened

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

2 large eggs

1 cup mini marshmallows

1/2 cup pecans, chopped (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    Peel the sweet potatoes and cut them into chunks. Place them in a large pot, cover with water, and bring to a boil. Cook until tender, about 15-20 minutes.

      Drain the sweet potatoes and return them to the pot. Mash them until smooth and creamy.

        Add the brown sugar, softened butter, vanilla extract, cinnamon, nutmeg, and salt to the mashed sweet potatoes. Mix until well combined.

          Beat the eggs in a separate bowl, then fold them into the sweet potato mixture until evenly incorporated.

            Grease a baking dish (around 9x13 inches) and pour the sweet potato mixture into the dish, spreading it evenly.

              Sprinkle the mini marshmallows on top of the sweet potato layer. If you're using pecans, sprinkle them over the marshmallows.

                Bake in the preheated oven for 25-30 minutes, or until the marshmallows are golden brown and the casserole is heated through.

                  Remove from the oven and let it cool for a few minutes before serving. The marshmallows should be gooey and slightly crisp on top.
