2 cups mashed sweet potatoes (about 2 medium sweet potatoes)

1 cup granulated sugar

1/2 cup brown sugar

1/2 cup milk or heavy cream

2 large eggs

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1 unbaked 9-inch pie crust (store-bought or homemade)

Optional: Whipped cream for serving

Instructions
 

Preheat the oven to 350°F (175°C).

    Prepare the sweet potatoes: Peel and chop the sweet potatoes, then boil them in a pot of water until tender, about 15-20 minutes. Drain and mash until smooth. Let cool slightly.

      In a large mixing bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, milk (or cream), eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt. Whisk together until smooth and well blended.

        Pour the sweet potato mixture into the unbaked pie crust, spreading it evenly.

          Bake the pie in the preheated oven for 60-70 minutes, or until the filling is set and a knife inserted in the center comes out clean.

            Cool the pie on a wire rack for at least one hour before slicing. This allows it to firm up a bit more.

              Serve with whipped cream on top if desired.
