1 lb (450g) boneless chicken breast, cut into bite-sized pieces

1/2 cup all-purpose flour

1 tsp garlic powder

1 tsp salt

1/2 tsp black pepper

1/4 cup vegetable oil (for frying)

1 red bell pepper, diced

1 green bell pepper, diced

1 cup pineapple chunks (fresh or canned)

1/2 onion, chopped

2 cloves garlic, minced

1/4 cup apple cider vinegar

1/2 cup brown sugar

1/4 cup ketchup

2 tbsp soy sauce

1 tsp grated ginger

1 tbsp cornstarch mixed with 2 tbsp water (for thickening)

Sesame seeds for garnish

Chopped green onions for garnish

Prepare the Chicken: In a mixing bowl, combine flour, garlic powder, salt, and black pepper. Toss the chicken pieces in the mixture until evenly coated.

    Fry the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Add the coated chicken pieces in batches and fry until golden brown and cooked through, about 5-7 minutes. Remove and drain on paper towels.

      Cook the Vegetables: In the same skillet, add the chopped onion, minced garlic, and diced bell peppers. Sauté for about 3-4 minutes until the vegetables are tender but still crisp.

        Make the Sauce: In a separate bowl, whisk together apple cider vinegar, brown sugar, ketchup, soy sauce, and grated ginger. Pour this mixture into the skillet with the cooked vegetables.

          Combine: Add the fried chicken and pineapple chunks to the skillet. Stir to coat everything in the sauce and bring to a gentle simmer.

            Thicken the Sauce: Stir in the cornstarch mixed with water and cook for an additional 2-3 minutes until the sauce has thickened.

              Serve: Once everything is well combined and heated through, remove from heat.
