Ingredients

4 cups water

1 cup fresh cherries, pitted and halved

2 tablespoons fresh ginger, grated

4 black tea bags (or 4 teaspoons loose black tea)

3 tablespoons honey (or maple syrup for a vegan option)

1/4 teaspoon cayenne pepper (adjust to taste)

Juice of 1 lemon

Ice cubes

Fresh mint leaves for garnish

Instructions

In a medium saucepan, bring 4 cups of water to a gentle boil.

Once boiling, add the grated ginger and the halved cherries. Reduce heat and let simmer for about 10 minutes, allowing the flavors to steep.

Remove the saucepan from heat and add the tea bags (or loose tea in a tea infuser). Let it steep for 5 minutes.

After steeping, remove the tea bags and strain the mixture through a fine sieve to remove the cherry and ginger solids, pressing down slightly to extract all the liquid.

Stir in the honey (or maple syrup), cayenne pepper, and lemon juice until well combined. Adjust sweetness and spiciness to taste if desired.

Allow the tea mixture to cool to room temperature before refrigerating it for at least 1 hour to chill.

To serve, fill glasses with ice cubes and pour the cooled cherry ginger tea over the ice.

Garnish each glass with fresh mint leaves for a refreshing aroma and additional flair.
