2 lbs chicken wings

1/2 cup maple syrup

2 tablespoons olive oil

2-3 fresh jalapeños, finely chopped (adjust to taste)

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon cayenne pepper (optional, for extra heat)

Salt and pepper to taste

1 tablespoon apple cider vinegar

Chopped green onions and sesame seeds for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with aluminum foil. Place a wire rack on top of the sheet for the wings to crisp up.

    Prepare the Wings: In a large bowl, pat the chicken wings dry with paper towels. This helps them get crispy in the oven. Season with salt, pepper, smoked paprika, garlic powder, and onion powder. Toss until the wings are evenly coated.

      Make the Marinade: In a separate bowl, whisk together the maple syrup, olive oil, finely chopped jalapeños, cayenne pepper (if using), and apple cider vinegar.

        Marinate the Wings: Pour the marinade over the seasoned wings and toss them well until they're fully coated. For best results, allow the wings to marinate in the refrigerator for at least 30 minutes or up to overnight.

          Bake the Wings: Arrange the marinated wings in a single layer on the prepared wire rack. Bake in the preheated oven for 35-45 minutes, turning halfway through, until the wings are golden brown and crispy.

            Glaze and Serve: Once the wings are done baking, remove them from the oven. Drizzle with any leftover marinade and toss to coat. Return to the oven for an additional 5-10 minutes to caramelize the glaze.

              Garnish and Enjoy: Remove from the oven, garnish with chopped green onions and sesame seeds, and serve hot with your favorite dipping sauce.
