Taco Cupcakes Recipe

1 pound ground beef (or turkey for a lighter option)

1 packet taco seasoning (or homemade mix)

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 cup shredded cheddar cheese

1 cup pico de gallo (or chopped tomatoes)

1/2 cup sour cream

1 package refrigerated crescent roll dough

1/2 cup sliced olives (optional)

Fresh cilantro for garnish

Salt and pepper to taste

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.

      Stir in the taco seasoning, black beans, and corn. Cook for another 5 minutes until everything is heated through. Add salt and pepper to taste.

        While the meat mixture cools slightly, open the crescent roll dough and separate it into triangles.

          Lightly grease a muffin tin. Press one triangle of dough into each muffin cup, making sure to cover the sides and bottom.

            Spoon the taco meat mixture evenly into each crescent cup, then top with a generous sprinkle of shredded cheddar cheese.

              Bake in the preheated oven for about 15-18 minutes or until the dough is golden brown and the cheese is bubbling.

                Remove from the oven and allow to cool for a few minutes.

                  Once cooled, top each taco cupcake with pico de gallo, a dollop of sour cream, sliced olives, and a sprinkle of fresh cilantro.
